Ingredients:
1 cup sorghum flour
1/2 cup tapioca flour
1/4 cup molasses
1/4 cup oil
1/3 cup brown sugar (or a sugar substitute)
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon baking soda
Pinch of salt
Instructions:
Preheat the oven to 350°F (175°C). In a bowl, whisk together sorghum flour, tapioca flour, ground ginger, cinnamon, nutmeg, baking soda, and salt. In a separate bowl, mix molasses, coconut oil, and brown sugar. Combine wet and dry ingredients until a dough forms.
Roll the dough into balls and place them on a baking sheet. Flatten each ball slightly with a fork. Bake for 10-12 minutes or until the edges are golden.
