1 cup chickpea flour

1/2 cup rice flour

1/2 cup oil

1/4 cup maple syrup (or a sweetener of your choice)

1 teaspoon vanilla extract

Pinch of salt


Preheat the oven to 350°F (175°C). In a bowl, combine chickpea flour, rice flour, and a pinch of salt. In a separate bowl, mix coconut oil, maple syrup, and vanilla extract. Combine wet and dry ingredients to form a dough.

Roll the dough into a log, wrap in plastic, and refrigerate for 30 minutes. Slice the log into cookies and place them on a baking sheet. Bake for 12-15 minutes or until the edges are lightly golden.
